Antonietta Baiano

University of Foggia



Antonietta Baiano was born in Foggia (Italy) in 1972. She is graduated in Food Science and Technology at the University of Bari in 1996 and, in 2000, she achieved the PhD in Food Biotechnology at the University of Foggia. She is an Associate Professor at the Sciences of Agriculture, Food Natural resources and Engineering (DAFNE) of the University of Foggia, where holds the teachings of “Food Technology Processes” and “Quality Management in the Food Chain”. She serves as associate editor for several Journal concerning Food Sciences and Technology. She is the author of 124 publications indexed o Scopus, with 3460 citations, and an H-index of 32. She has been the scientific directors of various research projects.

Her main research interests concern the following topics:

  • production and quality of alcoholic beverages, cereal products, and olive oil
  • evaluation of the phenolic fraction of foods
  • recovery of nutraceutical compounds from food wastes and by-products
